QUICK AND EASY YUMMY TREATS


From Cake Mixes

1 Cake Mix

1/2 cup cooking oil

2 eggs


Mix all together. Roll into small balls (the size of a large gum ball that you get from a machine). Mash them a little with your fingers. Bake in pre-heated oven 350 for about 7-10 minutes.


These are fast and easy, I bake them until they fluff up and small cracks form on the top and then I pull them out just as they are starting to brown. I like my cookies soft and chewy.


However, my husband likes them crisp so I always have to over bake a batch or two for him (which happens by accident anyway, so I'm lucky I can say they are for him, HA!).


Go crazy with this recipe!! You can add chocolate chips, raisins, coconut, nuts, dates, etc. About 1/2-1cup.


Also, as there are many different varieties of cake mixes, you can make Lemon cookies or German Chocolate (I put powdered sugar on these), Elizabeth likes the Tutti-Frutti cookies the best with Vanilla Frosting. Yellow, White, Cherry, Strawberry.


Remember, too, that you are not using the mix to make a fluffy moist cake so do not buy the more expensive mixes. I buy mine usually at Save-a-lot or Aldi's or even sometimes Wal-mart. When they go on sale, I buy about 30-40 boxes. They keep real well and I have never had one go bad or dry out.


I have doubled, tripled, and quadrupled this recipe with no problem.

Cobblers from Cake Mixes

1 Yellow or White Cake Mix

1 cup of milk

4 (15 ounce) or 2 (29 ounce) cans of Peach Pieces in Syrup


In a 9x13 pan, dump the peaches. You do not need to grease the pan.


I buy the pieces as they are cheaper and again, buy an off-brand at cheapest store. Once they are cooked in cobbler, there is absolutely no difference in peaches. Now...if you are eating them out of the can....there is no contest, that homemade canned peaches are superior and some brands are better. But buy the cheap ones for cooking cobbler.


In a mixing bowl, mix together the cake mix and mix. Do not mix well. leave lumpy. Take a spoon and dump mix over peaches. Spread out the best you can.


Bake in pre-heated oven at 350 for about 15-20 minutes. Use a toothpick to make sure cake part is done. The toothpick should not come out with uncooked batter on it, but it will be moist as the peaches part is wet.


I used to dribble 2 T of melted butter on top and then sprinkle it with cinnamon and sugar, but I have been trying to lose weight. (Big Sigh!) Crushed pecans are good on top, too!


Instead of Peaches:


Add:

2 cans of Cherry Pie Filling

2 cans of Crushed Pineapple


Mix these in pan and then top with mix.


Try Apple Pie Filling, Sweet Potatoes (of course squirt some syrup over them first and some cinnamon, sugar, and pecans).


Be inventive!

Blond Brownies with Chocolate Chips

from Cake Mixes

1 Yellow Cake Mix

1 cup of milk

1 (6 ounce) bag of Chocolate Chips


Mix cake mix and milk together. Do not mix well. Leave lumpy. Add the chips. Mix again.


Pour into a greased and floured 9x18 baking pan. (I use Baker's Joy now, but when I was dirt poor I had to grease and flour the pans by hand. If you use a paper towel it is a lot easier to grease it and then add a little flour and turn the pan every which way until it is covered with flour.)


Bake in a pre-heated 350 oven until toothpick comes clean, but do not overtake as it will be dry. About 15-20 minutes. (You want the toothpick to not have uncooked batter on it, but if tiny tiny pieces of cake are on it...it is okay.)


At my house, I double this and use a larger bag of Chocolate Chips. Also, I like Milk Chocolate Chips the best. Instead of Chocolate Chips try:


Variations:


1/2 cup Shredded Coconut

2 t orange extract

1/2 cup pecan pieces


Or:


Peanut Butter/Chocolate Chips/White Chocolate Chips/ etc. etc. any of the other chips


Or:


1/2 cup pecan pieces

1/2 cup melted butter

1 (6 ounce bag) butter brickle pieces


You can even put graham cracker crust, then Chocolate chips, and then this mixture on top.

I usually do the first as it is fast and easy and yet gets rid of my chocolate fix without being as bad as eating processed junk or candy.
